Slice the tomatoes & mozzarella about 1/4″ thick and place the pieces on a big platter. Alternate the sliced mozzarella cheese, tomatoes, and basil leaves in long rows down the plate.
Drizzle with Hunter Valley Olive Co Premium Mild EVOO & Fruity and Barrel Aged Balsamic Vinegar.
Sprinkle torn basil over the top.
